Fun AND easy BBQ Pork Noodle recipe

As promised, we are back again with another recipe !

This time we have our famous BBQ Pork Noodle.

A little introduction before we get into the recipe, BBQ Pork Noodle a.k.a Bún Thịt Nướng is an incredibly popular street food dish that is ubiquitous throughout Vietnam although it is believed that the most delicious version comes from the South. Like most Vietnamese dishes, BBQ Pork Noodle is light, flavorful, and nutritious. The original dish is strictly non-veg but we have found the perfect alternative and came up with a vegetarian that is just as good.

This recipe serves 2 or 3, or 1 if you are very hungry. This is a no judgment zone.

For the dressing:

• 1 cup of fish sauce/vegan fish sauce

• 3 cups of warm water

• 1 cup of rice vinegar

• 1 cup sugar

• 2 garlic cloves, finely chopped

• 1 long red chili, finely chopped

Mix all ingredients together until sugar is dissolved. Add garlic and chilli.

For the noodle:

Half a packet of vermicelli noodle.

Boil as per instruction on package.

For the BBQ Pork:

• 300g pork shoulder (or vegan meat soaked in water for 20 minutes)

• 1 teaspoon chopped garlic

• 4 teaspoon chopped shallots

• Chopped lemongrass (white part only, 1 stem)

• 1 teaspoon honey

• A pinch of ground pepper

• 25 ml (1 fl oz) fish sauce/vegan fish sauce

• A pinch of Vietcentric BBQ spices

Slice the pork shoulder/vegan meat thinly. In a large bowl, mix all other ingredients together and marinate the pork/vegan meat for 2 hours in the refrigerator.

To cook:

Heat 1/2 teaspoon vegetable oil in a large skillet or a wok, stir-fry marinated pork to brown, about 3-5 minute. Remove from heat.

Accompanying herbs and vegetables:

Bean sprouts, lettuce, coriander sprigs and perilla leaves (These balance the dish and gives it more flavour but it's okay if you don't have some of these).

To serve:

Place garnish on one side of the plate, then add boil vermicelli noodles to the other side. Top the whole thing off with the pork/vegan meat and pour 1 cup of the prepared sauce over. Enjoy while hot!
